Step 1: Preparing the Sea Almonds

To begin making Utheemu Metaa Gandu, start by breaking the sea almond fruit in half and extracting the precious nut within. This essential ingredient imparts a distinct flavor and texture to the candy.

Step 2: Cooking the Condensed Milk

Next, take a pan and pour condensed milk into it. Place the pan on the stove and heat it gradually. The condensed milk should be thickened slowly, ensuring that it reaches the desired consistency.

Step 3: Grinding the Sea Almonds

While the condensed milk is thickening, grind half of the sea almonds into a fine powder using a grinder or mortar and pestle. This ground sea almond mixture will be added to the condensed milk, adding an exquisite taste to the candy.

Step 4: Combining the Ingredients

Once the condensed milk has thickened to the desired consistency, add the ground sea almonds to the pan. Mix the ingredients thoroughly, allowing the mixture to further thicken and harden. As it thickens, it will reach a dough-like consistency.

Step 5: Shaping the Candy

Once the candy mixture has reached the perfect consistency, remove it from the heat and transfer it onto a stenciled belan (rolling board). Use a rolling pin to roll the mixture, shaping it into thin sheets. This step gives the Utheemu Metaa Gandu its characteristic appearance.
