In the picturesque island of Kelaa, nestled within the Maldives, lies a delightful culinary tradition known as Eid Bondi. With the guidance of Mariyam Zulfa, a local resident of Aseyri, we will uncover the cherished recipe behind Kelaa’s renowned sweet treat. Join us as we delve into the preparation of this delectable confection.

Step 1: Gathering the Ingredients

To embark on the journey of making Kelaa’s famous Eid Bondi, you will need young coconuts and sugar. The young coconut provides a delicate base for the sweet concoction.

Step 2: Preparing the Mixture

Begin by scraping the flesh of the young coconuts into a bowl. Mix in the desired amount of sugar, ensuring that the sweetness is well-balanced. Thoroughly combine the coconut flesh and sugar to create a cohesive mixture.

Step 3: Rolling the Mixture in Palm Banana Leafs

Once the mixture is well-mixed, procure dried palm banana leafs. Take a leaf and spread a generous amount of the coconut-sugar mixture onto it. Carefully roll the leaf, ensuring the filling is enclosed within. Tie both ends of the rolled leaf to secure the bondi.

Step 4: Assembling and Cooking

After preparing all the bondi rolls, gather them in a pot. Fill the pot with water, submerging the bondi completely. Place the pot on an open stove and cook the bondi thoroughly. Allow the flavors to meld together as the bondi absorbs the essence of the coconut and sugar.

Step 5: Serving and Savoring

Once cooked to perfection, remove the pot from the stove. The bondi should be soft, sweet, and infused with the essence of the coconut. Serve the Eid Bondi to family and friends, relishing the joy of this beloved Kelaa tradition.
